First question...Are you on a mac or PC? If you are on a Mac, I suggest the following...
1.) To rip a DVD use RipIt. Very easy and fast. They may have a PC version.
2.) If converting video to ipod format. Quicktime, VLC or Mac the Ripper will be your best bet.

Well I heard that itunes has this function as well (only heard, never practically operated!!!). It saided that when you put the video in iTunes and right click the video you put in the “video section", there should be an option “convert for ipod” or “convert to mp4” that can help you make it. You can try on this.

DVD Fab. Converts DVDs, files, etc.
Not free but a good product, multiple format support, frequent updates, great user forum.
I got lifetime keys a few years ago. I convert all my old DVDs to .mkv or .mp4 and have them on a HDD. You can convert any source to iPad, iPod, PS3, XBox, PSP, many more or do a custom conversion.
