Gluten
Gluten (from Latin gluten, "glue") is a protein composite found in foods processed from wheat and related grain species, including barley and rye. It gives elasticity to dough, helping it to rise and to keep its shape, and often gives the final product a chewy texture.





"Gluten is fairly indigestable in all people," Leffler says. "There's probably some kind of gluten intolerance in all of us."

I'm on a gluten-free diet, I've only been on it a few months now, but already I'm feeling better. I'm not having stomach aches or some of the issues I was having before. I don't (think I) have celiac disease, but eating gluten free has been enjoyable so far. I think the food tastes just as good if not better than it's wheat-infused alternatives, as well.
